A pairing of classic C-hop Cascade and Australian titan Galaxy are doing the goods on this pale ale; the eternal hype hop Galaxy bringing an absolute swag bag of freshly cut citrus, peach, and tropical fruits in abundance - to play off the prickly pine needle and fresh squeezed grapefruit that Cascade brings to the party. We don’t frequently make double IPAs, and specifically we’ve not brewed a version of our IPA Double Citra for a long time, perhaps 2013 was the previous batch. The aroma is pure bright enticement - citrus, stone fruit and the touch of dankness. The hop comes clean and laid bare, fruit aspect forward. Everything else seems there in its right place – it carries its fullness lightly, its bitterness sweetly. It remains clean, clear, restrained, focussed, balanced. Taut and to the point. It finishes like a gentle friend, familiar and comforting. But you will already have been transported somewhere else.
Inspired by the ridiculously tasty hoppy beers we fell for, we got brewing our own versions, over and over again, while listening to the blues greats. The heady concoction of old time blues records and juicy American hops transfixed us from the start and the rolling man was born in these sessions! Based on a 19th century recipe, this traditional beekeepers ale is light in colour with fruity notes and a hint of sweetness to compliment the dry hoppy taste. Brewed using our own natural spring water, 100% Maris Otter floor malted barley, top fermenting ale yeast, specially selected honeys and pure English hops.
