This single-hopped Mosaic pale ale is designed specifically for cask. We used a classic malt bill of mostly Best Ale Malt with a good portion of Extra Pale malt. We then whirlpooled 5kg Mosaic for a subtle bitterness and a fruity aroma. Finally, we dry-hopped with 10kg Mosaic BBC. All be it quite restrained hopping for us, this beer punches well above its weight.

Our friends at Jester King love to make the most of every ingredient they use. This inspired us to reuse a big batch of spent hops to draw every last drop of flavour from them. Punchy Nelson Sauvin and Waimea deliver hits of pine and grape, which shine through the delicate spicy, floral notes of this cold-fermented Saison.

Mountains of new wave hops in a modern take on the amber ale. The bitterness from a pale ale, with a touch of chocolate malt to add a sweetness and make it "Not Quite Pale...". Simcoe and Strata hops layer rich, tropical and stone fruit flavours before being dry hopped twice for extra intensity. The hops also contribute to a slight natural haze. Collaboration with Cloudwater Brew Co.
