Barrel aged wild ale.
A big, bold imperial stout. This beer aims to capture the depth and complexity of a barrel aged stout in a fresh beer without any barrel aging, using a blend of innovative barrel-derived extracts, wood additions and micro-oxidation. Collaboration with 3 Sons Brewery from Dania Beach, Florida.
This vintage Hellen's Early single variety perry from 2022 is decadence in the glass. Naturally sweet whilst combining massive tropical acidity, a viscous, honeyed richness in the mouth and vibrant astringent tannic finish that dries the palate. A drink with structure, intensity, and completely individual. Each sip takes you on a journey as it roars across your taste buds; a paradox of intensity and subtlety.
Carefully blended from a range of traditional cider apples which provide a crisper taste. Sharp, crisp and to the point. Pours with a red hued gold with a very slight haze. This cider is full-bodied with a short-lived fizz from a light carbonation leading to a slightly sparkling drier cider with a rustic cider apple feel.
A gorgeous, softened single variety Somerset Redstreak from the 2023 season. This is a beautiful medium bittersweet apple that balances a lovely spot of ripe, red apples in the mid palate with smooth tannins that still hold structure and bitterness. It's an effortlessly drinkable cider that is low in acidity but with bags of flavour on the finish.
A perfectly crafted blend of fresh Somerset apples. Medium dry, balanced, crisp and very refreshing.
Pale ale brewed with Citra hops.
Our first cask beer is a golden ale brewed using gently toasted heritage malt and single farm whole leaf Brewers Gold hops.
Inspired by the IPAs of the 2010s that James brewed at the start of his career and those historic recipes of breweries long gone. Some modern IPAs can feel like the hops are on top of the beer, a late addition, a flavour additive. In our India Pale Ale the hops are throughout the beer, in its bones, giving the full complex spectrum of the hops characteristics.
Creamy nitro stout. Malty notes of coffee, dark chocolate, and Bourbon biscuits alongside a light dark berry fruitiness. Fairly dry with a moderate roasty bitterness.
Naturally sparkling, pure juice, wild fermented, single variety Dabinett cider from 2023. A glorious dry cider that balances the classic full bodied tannins of Dabinett with the vintage character from that colder, wetter year - more peaches, nectarine and melon than the vivid bitter orange of previous years. Amazingly sessionable cider for us that has become a new flagship.
