Our Barleywine was barrel-aged for 6 months in ex-whisky, ex-sherry casks imparting a delicate sweetness among notes of Christmas cake. Malt-driven flavours dominate the flavour profile from a combination of melanoidin, Special B, and crystal malt, while Ernest and Olicana hops work with an unusual choice of NEIPA yeast to enhance the unique fruity character. Notes of figs, dates and dried cherries become apparent with the addition of Kawa Ethiopian Yirgacheffe coffee, and added vanilla rounds out the overall sweetness. Collaboration with DeadEnd Brew Machine and Tartarus.

The orchard apples are a mix of Herefordshires finest. We have used a blend of real cider apples, bitter sharps and bitter sweets to which are added some desert varieties to make a zesty medium dry and very refreshing cider.
