This award-winning porter is full of chocolate and coffee notes and based on an 1800s recipe. We avoid using roasted malts for this ale, instead loading in the chocolate malt and wheat, giving it a smooth, rich flavour. Mixed fermentation with Brettanomyces claussenii.
A dry-hopped pale ale. Layers of US hops are set against a backbone of British malts, so what this beer lacks in strength, it makes up for in character. For this West Coast style pale ale we went old school Yakima with the hops with a more modern addition in Talus which adds notes of pink grapefruit to the orange citrus and grapefruit notes of Centennial and Comet. A classic British-style cask IPA created using the very best ingredients we can get our hands on and then fermenting it in our new Union set. For our base malt, we have used Maris Otter from Norfolk, a touch of Simpsons' best Crystal malt to add a touch of colour and rounded sweetness and some of the special (and expensive) Brewers' Invert No.2 sugar from Ragus, which will add notes of caramel and toffee while helping to keep the beer’s body in check. The all-important hops are British-grown Goldings and Northdown, which give us some gentle berry flavours and rounded, cedar-like hop aromas to balance the maltiness.
