This single-hopped Mosaic pale ale is designed specifically for cask. We used a classic malt bill of mostly Best Ale Malt with a good portion of Extra Pale malt. We then whirlpooled 5kg Mosaic for a subtle bitterness and a fruity aroma. Finally, we dry-hopped with 10kg Mosaic BBC. All be it quite restrained hopping for us, this beer punches well above its weight.
This lingering combination of pale Maris Otter malts and choice German hops may make you pause for thought. As you contemplate the gentle biscuit malts, fresh Hersbrucker hops seduce the taste buds educating and enlightening the palate.
A thick, oily imperial stout inspired by the flavours of a sticky toffee pudding. A blend of German and British speciality malt provides the classic biscuity profile of a stout, then jam packed full of dates, treacle and molasses which combine to remind you of the classic dessert, however we wouldn't recommend pouring any custard on top of this one.
