Brewed as an English Old Ale, aged in Burgundy red wine and Bourbon barrels separately, then blended to become Modus Operandi - a mix from barrels across several ages and vintages. To go Beyond Modus for this year we have added locally grown grape juice into an exceptional blend of Modus Operandi and aged in some spectacular barrels.
A simple Saison grist pils, spelt and oats was fermented with a single saison strain. After the primary fermentation a blend of 13 brett strains were added to funk things up. The result is a pale saison with nice earthy funk and balanced bitterness.

A beautifully balanced soft Somerset cider.
Our single variety Russet cider is a strong, complex and nutty dry cider, that captures the minerality of the Wealden soil, and is aged before release.
Our medium cider is a blend of traditional cider apple varieties grown in the orchard on Woodredding Farm. The inclusion of our Yarlington Mill apples in the blend makes it rich in tannin which looks good in the glass and leaves a bold and satisfying aftertaste. The apples are gathered by hand and only the best fruit is pressed. This is an undiluted full juice cider fermented with the wild yeast that lives in our orchard and allowed to mature naturally.
Pours clear reddish pink, still. Aroma presents rich apple juice. Taste presents a distinct apple variety.
A floral and delicate medium dry still perry made from Kentish dessert pears with a touch of Bramley apples to balance acidity.
Murmuration blends two cider styles together for the perfect balance of flavour and structure. Bringing fragrance and fruit, we have low-tannin Jonagold, fermented with a trilogy of aromatic wine yeasts. To this, we have paired our classic Somerset keeved cider to bring natural sweetness, robust bittersweet tannins and a wild yeast finish.
Showcasing a brand new hop to BBF: Kohatu is bursting with classic New Zealand hop flavours of lime, pine and stone fruit; combined with the legendary Motueka. Double-dry hopped NZ pale ale at session strength. This beer has a super fresh tropical aroma to start followed with the dreamy kiwi lime and pine bitterness. Naked oats and torrefied wheat in the malt bill add complexity and a creamy mouthfeel.
Sweet malt and floral lime aromas with a bittersweet blend of hops and fruit on the palate and a complex succulent fruity hop finish.
