Our single variety Russet cider is a strong, complex and nutty dry cider, that captures the minerality of the Wealden soil, and is aged before release.
Our medium cider is a blend of traditional cider apple varieties grown in the orchard on Woodredding Farm. The inclusion of our Yarlington Mill apples in the blend makes it rich in tannin which looks good in the glass and leaves a bold and satisfying aftertaste. The apples are gathered by hand and only the best fruit is pressed. This is an undiluted full juice cider fermented with the wild yeast that lives in our orchard and allowed to mature naturally.
A thirst-quenching, pale sour beer - part of the 'Omega – Phi – Sigma' trilogy. Omega matures in stainless steel tanks where the Morpheus yeast imparts a refreshing sourness.
A keg conditioned Geuze with a full-bodied taste and signature Geuze Boon sour fruitiness.
Produced by the adding candi sugar to a select blend of our Oude Lambiek. In the case of our Oude Faro, the candi sugar is added months prior to packaging, allowing the yeast of our Lambic to slowly ferment the candi sugar until the Faro is no longer sweet. The finished product features a brown colour, a touch of caramelized character and a thirst-quenching acidic finish.
This new beer is a lighter version of our Oude Questche Tilquin a l'ancienne. Same recipe with 250 gr fresh plums per litre, but lighter in alcohol, due to the use of a blend of 50% of Meerts and 50% of 1 and 2 years old lambics.
Brewed using 40% soft wheat, Blanche de Bruxelles has a naturally opalescent colour with a very white, dense head. Coriander and orange peel added during wort boiling lend a slight but unobtrusive spiced nose. Although soft and smooth on the palate, as is typical of soft wheat beers, this light and well-balanced white beer is very fresh. Its complex aroma and modest alcohol content make Blanche de Bruxelles a beer like no other.
A Belgian strong ale which name means 'the spring'. It has a very rich aroma with sweet cherry, apple, dark fruits and vinous hints. Yeast is always in the background, both in taste and aroma. Taste is also complex, with plums, red fruits, hints of vanilla and some alcohol, with a sweet and creamy finish.
A coppery blonde beer, with aromas of fine hops, with marked bitterness, dry and very refreshing as it was originally. Coppery blond, the finest aromas and a strong bitterness transform this beer into a thirst-quencher with no equal, just the way it was created.
