For the first use of Carpenter Ranches' Citra, Westwood Farms' Mosaic and Newhouse Farms' Centennial in Sonoma, we decided to brew our flagship pale ale with a subtle nod to how we used to make it, using whole cone hops instead of pellets for a nuanced, well rounded expression of flavour. Our limited edition heritage branding celebrates all three farms and the role each variety plays in making Sonoma the beer it is today. Vegan friendly.

Brewed with Hull's Blending Room espresso roast and 4 kilos of Ugandan vanilla, the result is a rich, thick stout with layers of mocha, molasses and treacle warmth. Born from the darkness of our original 2019 Northern Monk collaboration, NDS2 marks the return of our annual showcase beer - Brewed this year with the stout specialists at Emperor's Brewery and the flavour fanatics at Bang the Elephant. Tnitially blended for the Evening Star pub in Brighton, they were after a strong, dry cider with all the wonderful wild qualities that we had become known for. Blending our strong wild fermented cider with a hint of sweet apple juice gave us the cider that was to be known as Sonic Titan. Named not only for its gravity and strength, but also after a track by the gods of heavy sleep.
