Irish Coffee Stout pours like a cup-a-joe straight from a diner's serving pot; black as night with a clay-coloured, lacing head. Subtle, freshly roasted coffee on the nose,with just a hint of dark chocolate. The first sip is all roasted barley and milk chocolate, with a creamy mouthfeel that coats the tongue. The lasting finish of 90% cocoa bitterness is just warming enough to invite you to take another sip, no milk or sugar needed.
Inspired by the ridiculously tasty hoppy beers we fell for, we got brewing our own versions, over and over again, while listening to the blues greats. The heady concoction of old time blues records and juicy American hops transfixed us from the start and the rolling man was born in these sessions! 2022 Dabinett and Harry Masters Jersey blend. A classic combination of two punchy bittersweets. Inviting on the nose - orchard aromas; fresh red apples, autumn leaves. Leading into a smooth, full bodied flavour with little acidity - the focus is on the interplay between the earlier, grippie tannins of the HMJ and the long-lasting flavour of Dabinett, with it’s big, bold orange-y-ness dominating the finish.
The Discovery apple is the first to mature and be picked in the autumn. With the nose and flavour of this early variety, our Discovery blend is a medium fruity cider with a delicate rose blush.

The essence of Raison d’Etre. This year’s blend is maybe the most ‘Raison raison’ ever. It feels like all the years of Raison past rolled into one - all the tangents and experiments we have gone down with Raison through the years since the first ever release in 2016 have informed our blending, our cidermaking and our final product here. Quintessential Ross-on-Wye. Beautifully matured, bone dry cider, that through that love of fruit and appreciation of barrel and time has created something so drinkable and so smooth that even at 8.4%, it won’t sit around long.
