Traditionally, India Pale Ales were heavily hopped to help survive the long hot journey to the sub-continent. Ours is a traditional style IPA but not over-hopped. Full-flavoured, yet light and refreshing with a restrained bitterness; amber in colour with citrus notes and made for easy drinking.
Still brewed using a complex yeast strain, Brew XI is characterised by hop notes giving way to buttery toffee, which washes over a basket of red and green apples, bananas and plums. A rounded crystal malt tones the rapid onset but not persistent bitterness. Warm and slightly astringent with a hint of cracked vanilla pods.
Draught Bass is still brewed to an original recipe using only the finest ingredients and the experience of generations. It is brewed with two strains of yeast to produce a complex nutty, malty taste with subtle hop undertones, which has widespread appeal to repertoire drinkers.
We have expertly blended our crisp Somerset Cider and tangy rhubarb to make this taste sensation. Sweet and full of rhubarb flavour with a tart edge to it.

Pat's father was Head Brewer at NBC's Phoenix Brewery on Bridge Street before him. Red Star is a true working man's pint made with the traditional Mild Ale malt variety that was a staple of NBC bitters and milds in the 1950s.
Pale malt and Chinook hops give this light coloured ale a clean crisp flavour. A pale, delicate, moreish beer.
