Cider made using organic apples that are pressed in the autumn, put into wooden whisky barrels and allowed to ferment, using only the wild yeasts present on the apple skins. When the fermentation has finished we are left with a fresh, dry and slightly sharp cider which, after continuing to mature over the winter months in barrels, also takes on some interesting oak characteristics.
A medium sweet cider blending two cider styles for the perfect balance of flavour and structure, without any added sugar or artificial sweetening. Bringing fragrance and fruit, we have crisp juicy Falstaff, fermented with aromatic wine yeasts. To this, we have paired our classic Somerset keeved cider to bring natural sweetness, robust bittersweet tannins and a wild yeast finish.
