A coolship brew. The hot wort was left to cool overnight, and as it cools, naturally occurring yeasts in the air are able to inoculate the wort before being transferred the following morning to neutral oak barrels then left to age until ready. Zesty lemon and apples come through with a heady bit of funk and a classic dry finish.

Passion fruit and key lime Gose with pink Himalayan salt and Indian coriander seeds, dry hopped with Citra.
