Ashton Bitter is unique as an apple which builds huge tannin, however, you have to blend it out as it is such a strong apple, so the light flavours of Bisquet (soft bittersweet) and Sweet Coppin (gentle sweet) help lengthen the flavour, with Reinette d’Obry an important addition of some juicy, citrus acidity to keep the cider in balance.
